Description

A colourful one-pan beef dinner with tender courgette, sweet peppers and pearl couscous simmered together in a rich tomato sauce.

Ingredients

  • 500g lean beef mince
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 courgette, diced
  • 1 red pepper, diced
  • 250g pearl couscous
  • 400g chopped tomatoes
  • 500ml beef stock
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tbsp olive oil
  • 30g Parmesan, finely grated
  • Small handful fresh parsley
  • Salt and freshly ground black pepper
Instructions

    Heat the oil in a large deep frying pan. Brown the beef over a medium-high heat for 5–6 minutes.

    Add the onion, courgette and pepper and cook for 5 minutes. Stir in the garlic, paprika and oregano for 30 seconds.

    Add the pearl couscous, chopped tomatoes and stock. Stir well and bring to a gentle simmer.

    Cook uncovered for 12–15 minutes, stirring regularly, until the couscous is tender and the sauce has thickened. Add a splash of water if needed.

    Season to taste and finish with Parmesan and parsley.
Note

Pearl couscous is sometimes sold as giant couscous. Stir frequently towards the end of cooking to prevent it catching on the base of the pan.
