Description

Layers of tender potato, softened leeks and ham baked in a creamy cheese sauce until bubbling and beautifully golden.

Ingredients

1kg floury potatoes, peeled and thinly sliced
2 leeks, sliced
250g cooked ham, diced
25g butter
2 garlic cloves, crushed
300ml double cream
200ml milk
150g mature Cheddar, grated
1 tsp thyme leaves
Salt and black pepper

Instructions

Heat the oven to 180°C fan and butter a large gratin dish.

Cook the leeks in the butter for 6-8 minutes until soft, adding the garlic for the final minute.

Warm the cream and milk together and season with pepper and a little salt.

Layer the potatoes, leeks, ham and two-thirds of the cheese in the dish.

Pour over the cream mixture and press the potatoes down gently.

Cover with foil and bake for 35 minutes.

Remove the foil, scatter over the remaining cheese and thyme and bake for another 20-25 minutes until golden and tender.

Rest for 10 minutes before serving.

Note

Slice the potatoes about 2-3mm thick so they cook evenly. A mandoline makes this quick and consistent.
