Crisp golden battered cod with fluffy chips – a proper British favourite for a comforting homemade supper.
Ingredients
Fish
4 x 150g cod or haddock fillets
150g plain flour, plus extra for dusting
1 tsp baking powder
200ml cold pale ale or sparkling water
Salt and black pepper
Vegetable oil, for frying
Chips
1kg floury potatoes, peeled
Salt
Malt vinegar and lemon wedges, to serve
Instructions
1
Cut the potatoes into thick chips, rinse and pat dry.

3
Mix the flour, baking powder and a pinch of salt. Whisk in the cold ale until just smooth.
4
Heat the oil to 180°C. Dust the fish lightly with flour, dip in batter and fry for 6–8 minutes until crisp, golden and cooked through.
5
Fry the chips again at 180°C for 3–5 minutes until golden. Drain, season and serve with the fish, lemon and malt vinegar.
Note
For the crispest batter, keep the liquid very cold and mix the batter immediately before frying.
