Description

A speedy beef noodle stir-fry with crisp broccoli and a glossy savoury sauce. It is colourful, filling and ideal when you need dinner on the table fast.

Ingredients

Stir-fry

300g medium egg noodles
450g lean beef steak, thinly sliced
1 tbsp vegetable oil
1 head broccoli, cut into small florets
1 red pepper, thinly sliced
4 spring onions, sliced
2 garlic cloves, crushed
1 tsp grated fresh ginger

Sauce

3 tbsp light soy sauce
1 tbsp oyster sauce
1 tbsp runny honey
1 tsp sesame oil
100ml water
1 tsp cornflour

Instructions

Cook the noodles according to the packet instructions, drain and set aside.

Whisk together all the sauce ingredients until smooth.

Heat half the oil in a wok or large frying pan over a high heat. Stir-fry the beef in batches for 2–3 minutes until browned, then remove to a plate.

Add the remaining oil, broccoli and pepper and stir-fry for 4–5 minutes. Add the spring onions, garlic and ginger and cook for 1 minute.

Return the beef to the pan with the noodles and sauce. Toss over a high heat for 2 minutes until glossy and piping hot.

Note

Great with: extra steamed greens or a sprinkle of sesame seeds.

Slice the beef across the grain for the most tender result.
