    Ingredients
  • 350g pappardelle
  • 2 chicken breasts, sliced
  • 250g chestnut mushrooms, sliced
  • 2 garlic cloves, crushed
  • 150ml double cream

  • 1 tbsp Dijon mustard
  • 2 tbsp fresh tarragon, chopped
  • 40g Parmesan, grated

Instructions
  1. 1
Cook the pappardelle until al dente, reserving some pasta water.
  2. 2
Heat the oil and cook the chicken for 6–8 minutes until golden and cooked through. Remove briefly from the pan.
  3. 3
