Tender chicken folded through a gently spiced, fruity curry dressing – the famous British classic created for the 1953 Coronation.

Ingredients

Coronation Chicken

500g cooked chicken, chopped
150g mayonnaise
100g Greek yoghurt
1½ tbsp mild curry powder
2 tbsp mango chutney
40g sultanas
2 tbsp flaked almonds, toasted
1 tbsp lemon juice
Salt and black pepper
Fresh coriander, optional

Instructions

Mix the mayonnaise, yoghurt, curry powder, mango chutney and lemon juice in a large bowl.

Fold in the cooked chicken and sultanas until evenly coated.

Season with salt and black pepper, then chill for at least 20 minutes if time allows.

Scatter with toasted almonds and coriander before serving.

Note

Serve in sandwiches, with a crisp salad, or spooned over a jacket potato. Leftover roast chicken works particularly well.
