To assemble

Instructions

  1. Prepare the filling

Slice the chicken breasts, peppers and red onion into thin strips. Toss together with the smoked paprika, cumin, garlic powder and a little oil until evenly coated.
  2. Cook the chicken and vegetables

Heat a large frying pan over a medium-high heat. Add the chicken and vegetables and fry for 10–12 minutes, stirring regularly, until the chicken is cooked through and the vegetables are tender with a little colour.
  3. Fill the wraps

Divide the chicken mixture between the tortillas and scatter over the grated Cheddar. Fold the sides in and roll each tortilla tightly to enclose the filling.
  4. Toast until crispy

Place the filled wraps seam-side down in a clean, dry frying pan. Toast for 1–2 minutes on each side until golden and crisp and the cheese has melted.
  5. Serve

Serve the crispy fajita wraps hot with sour cream and salsa on the side.

Note

For extra-crispy wraps, avoid overfilling them and toast in batches so they have plenty of contact with the hot pan.
