Crispy Halloumi Fries with Harissa Yoghurt
Description
Golden halloumi fries with a soft, salty centre, served with cool yoghurt rippled with spicy harissa. A simple sharing dish that disappears quickly.
Ingredients
Halloumi fries
Harissa yoghurt
Instructions
-
Pat the halloumi dry and cut into chunky, slightly irregular fries. Toss lightly with flour and smoked paprika.
-
Heat the olive oil in a large non-stick frying pan over medium-high heat.
-
Cook the halloumi in batches for 1–2 minutes on each side until evenly golden. Transfer to kitchen paper briefly.
-
Spoon the yoghurt into a small bowl and ripple through the harissa and lemon juice.
-
Pile the halloumi onto a plate, scatter with herbs and serve immediately with lemon wedges and the harissa yoghurt.
Note
Halloumi is naturally salty, so no extra salt is needed. Cook in batches so the fries brown rather than steam.
