Description

Juicy herbed beef koftas served with lemony grains, Greek salad and cooling tzatziki.

Ingredients
    Ingredients
  • 500g beef mince
  • 1 small onion, grated
  • 2 garlic cloves, crushed
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 2 tbsp chopped parsley
  • 250g couscous
  • 250ml hot chicken stock
  • 1 cucumber, chopped
  • 250g cherry tomatoes, halved
  • 75g feta, crumbled
  • 150g tzatziki
  • 1 lemon
  • Salt and black pepper
Instructions
  1. 1
Mix the beef with onion, garlic, oregano, cumin, parsley and seasoning. Shape into 12 small koftas.
  2. 2
Cook the koftas in a hot frying or griddle pan for 10–12 minutes, turning regularly, until browned and cooked through.
  3. 3
Pour the hot stock over the couscous, cover for 5 minutes, then fluff with a fork and add a squeeze of lemon.
  4. 4
Combine the cucumber, tomatoes and feta.
  5. 5
Divide the couscous between bowls and add the koftas, salad and tzatziki. Serve with lemon wedges.
Note

Wet your hands lightly before shaping the koftas to stop the mixture sticking.
