Colourful halloumi and vegetable kebabs with a smoky-spicy harissa yoghurt dip.

Ingredients
    Kebabs
  • 250 g halloumi, cut into chunks
  • 1 courgette, thickly sliced
  • 1 red pepper, cut into chunks
  • 1 yellow pepper, cut into chunks
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
    • Harissa yoghurt
  • 200 g Greek yoghurt
  • 1 tbsp harissa paste
  • 1 tsp lemon juice
Instructions

    ThreadThread the halloumi and vegetables loosely onto skewers and brush with olive oil.

    CookGrill or barbecue for 10–15 minutes, turning regularly, until the vegetables soften and halloumi is golden.

Note

Keep the pieces irregular and loosely spaced so the kebabs cook naturally.
