A comforting spinach curry with golden paneer cubes and warming Indian spices.

Ingredients
    Ingredients
  • 1 tbsp vegetable oil
  • 225g paneer, cut into cubes
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 20g fresh ginger, grated
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • 1/2 tsp turmeric
  • 500g spinach
  • 150ml water
  • 75ml double cream
  • Salt to taste
Instructions

    Heat half the oil and fry the paneer until golden on several sides. Set aside.

    Add the remaining oil and soften the onion for 6–8 minutes.

    Add the garlic, ginger and spices and cook for 1 minute.

    Add the spinach and water, cover and cook until wilted, then blend to a textured sauce.

    Return to the pan, stir in the cream and paneer, and simmer for 5 minutes. Season and serve with rice or naan.
Note

For a fresher flavour, add a squeeze of lemon just before serving.
