Teriyaki-Style Sauce
Instructions
-
Prepare the tofu
Cut the tofu into bite-sized cubes and toss with the cornflour until lightly coated. -
Crisp the tofu
Heat the vegetable oil in a large frying pan or wok over a medium-high heat. Cook the tofu for 6–8 minutes, turning regularly, until crisp and golden. Remove from the pan and set aside. -
Cook the noodles
Cook the noodles according to the packet instructions, then drain. -
Stir-fry the vegetables
Add the red pepper, carrot and broccoli to the pan and stir-fry for 4–5 minutes until just tender but still colourful. -
Make the sauce
Mix the soy sauce, maple syrup, rice vinegar, ginger, garlic and sesame oil together in a small bowl. -
Combine
Return the tofu to the pan with the drained noodles and sauce. Toss everything together over the heat for 2–3 minutes until glossy, sticky and evenly coated. Serve immediately.
Note
Pressing or thoroughly drying the tofu helps it crisp up. Check the noodles and soy sauce are egg-free and vegan if cooking for a strict vegan diet.
