Fresh, fragrant chicken bowls with lemongrass, lime and herbs, served with rice and crisp vegetables.

Ingredients

  • 600g skinless boneless chicken thighs, sliced
  • 2 lemongrass stalks, tender inner part finely chopped
  • 2 garlic cloves, crushed
  • 1 tbsp fish sauce
  • 1 tbsp light soy sauce
  • 1 tbsp soft brown sugar
  • 1 tbsp vegetable oil
  • 300g jasmine rice
  • 1 carrot, cut into matchsticks
  • 1/2 cucumber, sliced
  • Small handful mint and coriander
  • 1 lime, cut into wedges
Instructions

    Mix the chicken with lemongrass, garlic, fish sauce, soy sauce and sugar and leave for 10 minutes.

    Cook the rice according to the packet instructions.

    Heat the oil in a large frying pan and cook the chicken for 8–10 minutes until browned and cooked through.

    Divide the rice between bowls and top with chicken, carrot, cucumber and fresh herbs.

    Serve with lime wedges.
Note

The chicken can be marinated for up to 4 hours for a stronger lemongrass flavour.
