Description
A hearty one-pan dinner of seasoned beef, tender rice, tomatoes and red pepper finished with a layer of melted Cheddar. Easy, family-friendly and packed with taco-inspired flavour.
Ingredients
For the taco rice
Instructions
-
Brown the beef
Heat a large deep frying pan or sauté pan over a medium-high heat. Add the beef mince and onion and cook until the beef is browned and the onion has softened. -
Add the pepper and spices
Stir in the diced red pepper, cumin and paprika and cook for another 2 minutes. -
Add the rice
Stir in the long-grain rice, chopped tomatoes and beef stock, making sure the rice is evenly distributed. -
Cook gently
Bring to a gentle simmer, cover and cook for around 18 minutes, stirring occasionally, until the rice is tender and most of the liquid has been absorbed. -
Add the cheese
Scatter the grated Cheddar over the top, replace the lid and leave for a few minutes until the cheese has melted. Serve hot.
Note
Check the rice towards the end of cooking and add a small splash of water or stock if the pan becomes dry before the rice is tender.
