Ingredients

Instructions

  1. Preheat oven to 180°C/350°F/gas mark 4. Line cupcake tin with 12 cases.
  2. Using an electric mixer or a wooden spoon, cream the butter and sugar together until light and fluffy. Beat in the eggs, one at a time, making sure each is well combined before adding the next. In a separate bowl, sift together the flour, spices, and salt.
  3. Mix the dry ingredients into the wet mixture in three separate parts, alternating with the apple cider vinegar. Stir until fully combined. Fold in the grated apple.
  4. Spoon the batter into the cupcake cases, filling each case about two-thirds full. Bake in your preheated oven for 20-25 minutes or until a toothpick inserted into the centre of a cupcake comes out clean.
  5. Leave the cupcakes to cool completely on a wire rack.
  6. Meanwhile, prepare the frosting by beating the butter until pale and creamy.
  7. Gradually sift in the icing sugar, beating well after each addition. Add the vanilla extract and enough milk to achieve a smooth, spreadable consistency.
  8. When the cupcakes are completely cool, pipe or spread the frosting on top using a palette knife or piping bag.
  9. Decorate the frosted cupcakes with your choice of sprinkles or other decorations.
