This is a traditional French dish in which potatoes areslow-cooked in oil (usually duck fat ) along with garlic and herbs until theyare soft and tender. The slow cooking technique allows the potatoes to absorbthe flavours of the garlic and herbs, resulting in a rich and luxurious dishthat is perfect as a side or as a main course. Our version uses olive oil in place of duck fat, so veggies and veganscan enjoy them too, and we’ve even been known to make them in the air fryer, tosave on cooking costs.
