Description

Tender pulled pork piled into soft slider buns with a crisp, fresh apple slaw. A relaxed sharing dish that is ideal for weekends, parties and casual family gatherings.

Ingredients

Pulled pork

Apple slaw & sliders

Instructions

  1. Heat the oven to 160°C/140°C fan. Rub the pork with olive oil, paprika, cumin, garlic granules and salt.
  2. Place in a covered roasting tin, pour the apple juice around the pork and cook for 4 hours, or until very tender.
  3. Transfer the pork to a board, shred with two forks and discard excess fat. Stir through the barbecue sauce and enough cooking juices to keep the meat succulent.
  4. Mix the apples, cabbages and carrot with the mayonnaise, cider vinegar and mustard.
  5. Split the slider buns and fill generously with pulled pork and apple slaw. Scatter with herbs and serve immediately.

Note

The pork can be cooked a day ahead and reheated gently with a splash of apple juice. For extra crunch, add the slaw just before serving.
