Sticky Orange Chicken & Rice
Description
Tender chicken coated in a glossy sweet and savoury orange sauce with garlic and ginger, served with fluffy basmati rice and broccoli. A quick, colourful family dinner ready in around 30 minutes.
Ingredients
For the orange chicken and rice
Instructions
-
Cook the rice
Cook the basmati rice according to the packet instructions, then drain if needed and keep warm. -
Cook the chicken
Heat a large frying pan over a medium-high heat. Add the diced chicken and fry until golden and cooked through. -
Mix the orange sauce
In a bowl, whisk together the orange juice, soy sauce, brown sugar, garlic, ginger and cornflour until smooth. -
Glaze the chicken
Pour the sauce into the pan with the chicken. Simmer for a few minutes, stirring regularly, until the sauce becomes glossy and thick enough to coat the chicken. -
Cook the broccoli
Meanwhile, steam the broccoli until just tender. -
Serve
Divide the basmati rice between bowls and top with the sticky orange chicken and steamed broccoli.
Note
Stir the sauce mixture just before adding it to the pan, as the cornflour can settle at the bottom. Keep the sauce at a gentle simmer until it turns glossy and coats the chicken.
